The entire tequila-making process takes place at Hacienda Patrón, where only Patrón is produced.

Tequila has been around for ages, but it wasn't until Patrón launched in 1989 that the world was introduced to ultra-premium tequila. A tequila very different from people's notion of tequila.

Patrón is the brainchild of two entrepreneurs, John Paul DeJoria and Martin Crowley, whose love of tequila and desire to create the best tequila in the world led them to the Highlands of Jalisco, Mexico. There they found tequila industry veteran Francisco Alcaraz and asked him to produce the most extraordinary, highest-quality 100 percent agave tequila possible. From that fortuitous meeting, Patrón Tequila was born.

Using a centuries-old technique called the tahona process, where agave fibers are slowly crushed by a large volcanic stone wheel, and then the agave juice is fermented and distilled with the agave fiber, Francisco created his tequila, and tequila from the more modern roller mill process, and blended them together to become Patrón.

The company's first tequilas were Patrón Silver and Patrón Añejo, which were followed in 1992 with the introduction of Patrón Reposado. Also launching that year was Patrón XO Cafe, a distinct coffee liqueur, characterized by its uniquely dry - not sweet - taste (and in 2012, a chocolate coffee liqueur extension called Patrón XO Cafe Dark Cocoa was launched, and in 2014 the brand introduced a chile chocolate liqueur called Patrón XO Cafe Incendio). Patrón Citrónge, an extra-fine orange liqueur, was also created in 1992, offering Patrón lovers the ultimate ingredient for a perfect margarita. Today, that line has expanded to also include Patrón Citrónge Lime liqueur and Patrón Citrónge Mango liqueur.

Patron is also dedicated to limiting the environmental impact of its production. Several years ago at the distillery, a multi-million dollar reverse osmosis plant - the first of its kind in the tequila industry - was completed to reclaim up to 70 percent of wastewater and turn it into clean water for cooling towers and cleaning processes. Leftover agave remnants are turned into organic compost, which is donated to community gardens and given to local farmers to spread in their agave fields. The Hacienda Patrón distillery has earned ISO 14001 certification and a clean industry certification from PROFEPA (the Mexican Federal Environmental Protection Agency) for these efforts to reduce waste, lessen emissions, and sustain the environment. The Hacienda Patrón distillery is also now connected directly to a natural gas pipeline, significantly reducing harmful air emissions.


King of the Night - Sierra Tequila


There is one thing that all Destilería Sierra tequilas have in common, and that is the traditional care with which they are handled throughout the entire production process. With its characteristic bottle shape including the established Sombrero on top, few Tequila enthusiasts in Malta & Gozo do not recognise the brand!

Utilising jimadores with years of experience, thes care for the agaves with their hands and hearts from the time they are planted to when they are harvested, which can be up to twelve years, can only be called dedication. They work the Sierra fields without the help of machines, which allows the plants to benefit from their natural environment in peace.

The jimador waits for the moment when the inner leaves of the agave are longer than the outer ones. That is the ideal time to harvest. The agaves are harvested individually by hand by the jimadores using a coa, which is a sharp harvesting knife. The heart of the agave is called the piña (or “pineapple”).

Destilería Sierra manufactures seven different kinds of tequila as well as a liqueur with tequila in order to satisfy different preferences, tastes, and requirements. Silver , Reposado , Antiguo Blanco and Antiguo Extra Anejo as well as Milenario Blanco , Milenario Reposado and Milenario Extra Anejo.

Sierra Tequila Silver and Sierra Tequila Reposado are probably the best-known and most popular tequilas in the Sierra range. Wherever you spend your evenings, you are sure to see the red and gold hat – and that’s a good thing.

Sierra Tequila Silver is a mature, clear tequila. Its full, fruity, fresh aroma dominated by a subtle chili note reflects the Tequilana Weber Azul Agave and also contains slight hints of green apple and young pineapple. Nuances of pepper give Sierra Tequila Silver that certain something, making it a feisty tequila.

Sierra Tequila Reposado is traditionally distilled twice in copper pot stills. It matures for nine months in toasted oak barrels, which gives it its shimmering golden color. Reposado is the favorite variety of tequila among Mexicans. The fresh, irresistible fruitiness of Sierra Tequila Reposado carries delicate notes of vanilla, caramel, and herbs. A recipient of numerous international awards, Sierra Tequila Reposado’s diversity of aromas makes it especially complex.
